Note the lower you go down on the scale the less cooked it would be. I am a very moderate, in the middle-guy and my steak preference is the same. I like it more thoroughly cooked but usually not to the extreme of crispy (medium-rare to well-done is most preferable).
btw I heard Asians stereotype Whites as rare-steak lovers. Is that true from your personal experience?
Command and conquer the world. But I can only do that in Age of Empires lol!
The better the cut of beef, both in type of steak (filet vs. sirloin for example) and the quality of the beef (Matsusaka vs. grocery store USDA choice), along with better handling, aging (if any), and cooking method would theoretically lead you to have a steak toward the rare side. Once you start messing around with lower grade cheap cuts you might as well burn 'em to a crisp.
If the quality it top notch, try Carne Crudo if it's available!
I'm not a huge steak eater either. Maybe I haven't been eating the right cuts/quality, I either find it too grisly or too heavy. If I do eat steak, I usually got for med-rare; pink but not dripping with blood.
